Stuffed Dates


INGREDIENTS

Dates (pitted) – 1 lb

Almonds – 1 cup

Milk – 3/4th cup

Sugar – 3/4th cup

Ghee – 1 tbsp

Cardamom Powder – 1/2 tsp

Pistachios (Coarsely Chopped) – 2 tbsp

METHOD

Soak almonds in hot water for 30 minutes. Remove the skin. Now, in the grinder, grind the almonds, milk and sugar, till they are a paste. Heat the ghee in a pan, and add the paste, and cardamom powder. Cook for about 20 minutes.  When the paste reaches the consistency of a dough, remove it from the heat and allow it to cool.

Slit the dates length wise on one side, and fill in the almond paste and decorate with pistachios.
